Ingredients
- 3 1/2 lamb shanks
- 2 tbsp olive oil
- 8 cloves garlic
- 2 tomatoes
- 1 large onion
- 1 cup unsalted chicken stock
- 2 tsp ground cumin
- 1/2 tsp cinnamon powder
- 1/2 tsp turmeric
- 1/2 tsp ground coriander seed
- salt and black pepper to taste (optional)
- fresh coriander
Steps
- Heat the olive oil on the sauté setting and brown the lamb shanks for 8 minutes.
- Add the onion and garlic and cook for 3 minutes.
- Stir in the tomatoes, stock, cumin, cinnamon, turmeric, coriander, salt, and pepper.
- Seal the cooker and cook at high pressure for 45 minutes.
- Let the pressure release naturally for 15 minutes, then release any remaining pressure.
- Top the lamb with fresh coriander and serve from the cooker.
