Ingredients
- 1 1/2 lb asparagus
- 1 tbsp butter
- 1 small yellow onion
- 1 clove garlic
- 2 1/4 cups chicken broth
- salt and black pepper (optional)
- 1/2 cup heavy whipping cream (optional)
- 1/2 tsp fresh lemon juice
- shredded parmesan cheese (optional)
Steps
- Trim and cut the asparagus into small pieces, saving a few tips for topping if desired.
- Melt the butter in a large pot over medium heat and cook the onion and garlic for 5 minutes.
- Add the asparagus and chicken broth, bring to a boil, then simmer uncovered for 20 minutes.
- Blend the soup until smooth with an immersion blender, or blend in batches carefully.
- Stir in the cream and lemon juice, then heat gently for 3 minutes without boiling.
- Season with salt and pepper, and top with Parmesan if using.
