Ingredients
- 1 tbsp avocado oil
- 2 cloves garlic
- 1 tbsp brown sugar (optional)
- 1 1/2 tbsp red curry paste
- 1 cans (14 oz) full fat coconut milk
- 1 1/2 tbsp soy sauce
- 1 cans (14 oz) chickpeas
- 2 1/2 cups fresh spinach
- 1/2 cup cilantro
- 1 1/2 cups jasmine rice
Steps
- Cook the jasmine rice with 2 1/4 cups water in a covered pot for 15 to 18 minutes.
- Heat the avocado oil in a large skillet over medium heat, then cook the garlic for 1 minute.
- Stir in the curry paste and brown sugar, if using, and cook for 1 minute.
- Add the coconut milk, soy sauce, and chickpeas, then simmer for 8 minutes.
- Stir in the spinach and cook for 2 minutes until wilted, then scatter the cilantro over the curry and spoon it over the rice.
