Ingredients
- 16 oz bag black eyed peas
- 4 cups water
- 2 bay leaves
- 1/2 red onion
- 1/3 cup italian parsley
- 1/4 cup + 2 tablespoons fresh lemon juice (optional)
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- optional: add diced carrots
Steps
- Cover the black-eyed peas with the water and bay leaves in a large bowl.
- Soak the peas for 45 minutes, then drain them and remove the bay leaves.
- Stir in the onion and parsley.
- Whisk the lemon juice, olive oil, vinegar, salt, and pepper in a small bowl.
- Pour the dressing over the peas and toss until coated.
