Ingredients

1 cup dried chickpeas
2 1/2 cloves garlic
1 small onion
1 cup cilantro leaves
2 tsp ground coriander
2 tsp ground cumin
1 tsp cayenne pepper
2 tbsp chickpea flour
1/2 tsp baking powder
salt and black pepper (optional)

Steps

Cover the dried chickpeas with water and soak them at room temperature for 6 hours.
Drain the chickpeas well and pat them dry, then let them stand for 10 minutes.
Process the chickpeas, garlic, onion, cilantro, coriander, cumin, cayenne, chickpea flour, baking powder, salt, and pepper until finely crumbly.
Rest the mixture for 20 minutes, then shape it into 16 small balls.
Preheat the air fryer to 375 F for 3 minutes.
Cook the falafel in two batches for 10 minutes each, turning once, until browned and firm.
