Ingredients

1 tbsp chopped chives
2 tsp tajín seasoning
4 large artichokes
1 lemon
1 onion
1/2 cup white wine
1/4 cup kosher salt
5 1/2 sprigs thyme
1 tbsp black peppercorns
1 bay leaf

Steps

Trim the artichoke stems and pointed leaves, cut each artichoke in half, and remove the fuzzy centers.
Place the artichokes cut side up in a large pot with the lemon halves, onion, wine, salt, thyme, peppercorns, and bay leaf.
Add water to reach halfway up the artichokes, cover the pot, and simmer for 35 minutes.
Drain the artichokes and arrange them on a platter.
Sprinkle them with Tajín and chopped chives before serving.
