Ingredients

3 oz about 4 cups baby arugula and baby spinach mix
5 oz gluten-free or wheat pasta
1/3 cup sun dried tomatoes
2 tbsp capers
2 tbsp balsamic vinegar
1 1/2 tbsp extra virgin olive oil
salt and fresh pepper to taste (optional)
2 tbsp freshly shaved parmigiano reggiano

Steps

Bring a medium pot of salted water to a boil and cook the pasta according to its package directions.
Drain the pasta and rinse it under cold water until cool, then drain well.
Whisk the balsamic vinegar and olive oil in a large bowl.
Toss in the pasta, greens, sun-dried tomatoes, and capers until coated.
Season with salt and pepper, then top with the shaved Parmesan.
