Strawberry Birthday Cake

A vanilla sponge bakes in one pan, cools briefly, and layers with sweet whipped cream and strawberries.

Ingredients

  • 6 large eggs
  • 1 1/2 cups granulated sugar
  • 1/3 cup water
  • 1 tsp vanilla
  • 1 1/3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 3 cups whipping cream
  • 1 tbsp vanilla
  • 1/2 cup granulated sugar
  • 3 pints strawberries (optional)

Steps

  1. Heat the oven to 350 F and grease a 9-inch round cake pan.
  2. Beat the eggs and granulated sugar until thick, then beat in the water and vanilla.
  3. Fold in the flour and baking powder, pour the batter into the pan, and bake for 25 minutes until firm.
  4. Cool the cake in the pan for 10 minutes, then transfer it to a rack to cool completely.
  5. Whip the cream with vanilla and sugar until it holds soft peaks.
  6. Split the cake, layer it with whipped cream and strawberries, and cover the top with the remaining cream.
