85 g corn flour
85 g plain flour
2 tsp black pepper
2 tsp szechuan peppercorns
400 g squid
sliced spring onions
sliced green chilli
1 chopped red chilli
1/2 cucumber
1 chopped red onions
100 ml rice vinegar
1 tbsp caster sugar
2 tsp fish sauce

Steps

Mix the corn flour, plain flour, black pepper, and crushed Szechuan peppercorns in a shallow bowl.
Stir the rice vinegar, caster sugar, fish sauce, red onion, cucumber, and red chilli in a bowl, then rest for 15 minutes.
Pat the squid dry, toss it in the flour mixture, and shake off the excess.
Heat 1 inch of cooking oil in a deep skillet to 350 F.
Fry the squid in batches for 2 to 3 minutes, until lightly golden and opaque.
Drain the squid, then top it with the spring onions and green chilli and serve with the cucumber mixture.
