Ingredients
- 1/2 cup chopped leeks
- 2 tbsp extra virgin olive oil (optional)
- 1 cans (15 oz) cannellini beans
- 3/4 cup oats
- 2 tbsp all purpose flour
- 1 clove garlic
- 1 tbsp rosemary
- 1 lemon
- juice of 1/2 lemon
- salt & pepper (optional)
- 1 egg
Steps
- Cook the leeks and garlic in olive oil in a large skillet over medium heat for 5 minutes until soft.
- Mash the cannellini beans in a bowl for 5 minutes, leaving some small pieces.
- Stir in the oats, flour, rosemary, lemon juice, egg, salt, pepper, and cooked leek mixture for 3 minutes.
- Shape the mixture into eight cakes during 5 minutes.
- Heat oil in the skillet over medium heat and cook the cakes for 10 minutes, turning once, until browned and firm.
