Ingredients
- 600 g tomatoes
- 2 tbsp olive oil
- 2 tsp ground cumin
- 2 cloves garlic finely chopped or crushed
- 2 x 400g cans green or puy lentils drained and rinsed
- 2 tsp harissa paste
- 2 lemons 1 zested
- bunch of parsley coriander or mint
- 200 g feta
Steps
- Heat the oven to 425 F and halve the tomatoes for 5 minutes.
- Toss the tomatoes with olive oil, cumin, garlic, salt, and pepper in a baking dish.
- Roast the tomatoes for 20 minutes, until soft and lightly browned.
- Warm the lentils with harissa, lemon zest, and lemon juice in a large skillet for 5 minutes.
- Top the lentils with the tomatoes, herbs, and crumbled feta.
