600 g / 1.2 lb pumpkin
1 1/2 tbsp olive oil
salt and pepper
2 1/2 tbsp / 50 ml extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp honey
salt and pepper

Steps

Heat the oven to 425 F and cut the pumpkin into bite-size pieces.
Toss the pumpkin with 1 1/2 tablespoons olive oil, salt, and pepper on a baking sheet.
Roast the pumpkin for 25 minutes, turning once, until tender and lightly browned.
Toast the pine nuts in a dry skillet over medium heat for 3 minutes.
Whisk the remaining olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl.
