Ingredients

2 large eggs
1/2 cup grated pecorino romano or grated parmesan cheese
1/2 tsp garlic powder
1/2 tsp salt (optional)
8 oz bacon
1 cup reserved pasta water
lots of freshly ground black pepper
1 1/4 cups frozen peas
freshly ground salt and black pepper

Steps

Whisk the eggs, cheese, garlic powder, salt, and plenty of pepper in a bowl.
Cook the bacon in a large skillet over medium heat for 6 to 8 minutes, then leave the rendered fat in the pan.
Boil the bucatini in salted water until tender, adding the peas during the final 2 minutes.
Reserve 1 cup of pasta water, drain the pasta and peas, and add them to the bacon skillet.
Remove the skillet from the heat, stir in the egg mixture and enough pasta water to coat the noodles.
Return the skillet to low heat and stir for 2 to 3 minutes, until the sauce reaches 160 F and the eggs are fully set.
