Ingredients
- 60 g / 4 tbsp unsalted butter
- 1 tbsp fresh lemon juice
- salt and finely ground pepper
- 2 x thin white fish fillets
- salt and pepper
- 2 tbsp white flour
- 2 tbsp oil
- lemon wedges
- finely chopped parsley (optional)
Steps
- Pat the fish dry and season both sides with salt and pepper, then coat lightly with flour.
- Heat the oil in a 12-inch skillet over medium heat.
- Cook the fish for 3 to 4 minutes per side, until golden and cooked to 145 F, then transfer it to a plate.
- Melt the butter in the skillet and stir in the lemon juice, salt, and pepper for 2 minutes.
- Pour the sauce over the fish and add lemon wedges and parsley.
