Ingredients
- 1/2 lb pasta
- 1/2 lb asparagus
- 1 jar (12 oz) artichoke hearts
- 1 cup peas
- 1 large lemon
- 1/4 cup olive oil
- 2 cloves garlic
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/8 tsp red pepper flakes
- 1/4 cup fresh grated parmesan cheese
Steps
- Boil the pasta in salted water according to its package directions, adding asparagus during the last 3 minutes.
- Drain the pasta and asparagus, then rinse them with cool water.
- Whisk lemon juice, olive oil, garlic, salt, pepper, and red pepper flakes in a large bowl.
- Add the pasta, asparagus, artichokes, peas, and parmesan to the bowl.
- Toss until coated and chill for 5 minutes before serving.
