Ingredients
- 1 eggplant
- 3/4 cup grated parmesan
- 1/2 cup plain breadcrumbs
- 1/2 cup panko breadcrumbs
- 1/2 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried basil
- 1/2 tsp dried parsley
- 1 egg white
Steps
- Heat the oven to 425 F and line a large baking sheet with cooking oil.
- Cut the eggplant into thick sticks.
- Mix the parmesan, breadcrumbs, panko, salt, garlic powder, onion powder, basil, and parsley in a shallow bowl.
- Beat the egg white in a second bowl.
- Dip each eggplant stick in egg white, coat it with the crumb mixture, and place it on the baking sheet.
- Bake for 15 minutes, turn the sticks, and bake for 10 more minutes.
