Ingredients

1 cup powdered sugar
1 cup cornstarch
1/2 cup + 1/4 c cold water
2 envelopes unflavored gelatin
1 1/2 cup granulated sugar
2 egg whites
2 tsp pure vanilla extract
0 tsp salt

Steps

Dust a 9-by-13-inch pan with equal parts powdered sugar and cornstarch.
Sprinkle the gelatin over 1/2 cup cold water in a small bowl and let it stand for 5 minutes.
Boil the granulated sugar with the remaining 1/4 cup water in a saucepan until the syrup reaches 240 F.
Beat the egg whites in a large bowl until foamy, then slowly add the hot syrup.
Beat in the gelatin and vanilla until thick, glossy, and at least 160 F.
Spread the mixture in the prepared pan and chill it for 10 minutes.
Cut the marshmallow into pieces and coat each piece with the remaining powdered sugar and cornstarch.
