Ingredients
- 1 lb large shrimp
- sweet baby ray’s honey teriyaki marinade
- 1 lb fresh pineapple
- 1 cup long grain rice
- 1 cup coconut milk
- 1 cup water
- chopped cilantro for garnish (optional)
Steps
- Marinate the shrimp in the honey teriyaki marinade for 10 minutes while preparing the other ingredients.
- Combine the rice, coconut milk, and water in a medium saucepan and bring it to a boil.
- Cover the saucepan, reduce the heat to low, and cook the rice for 18 to 20 minutes.
- Heat the grill to medium-high and thread the shrimp and pineapple onto skewers.
- Grill the skewers for 3 to 4 minutes per side, until the shrimp reach 145 F and the pineapple is lightly charred.
- Fluff the rice with a fork and serve it with the grilled skewers and optional cilantro.
