Ingredients
- 1 tbsp unsalted butter
- 2 cups low sodium chicken broth
- 1/2 cup frozen peas
- 1 cup uncooked converted brown rice
- 4 tsp olive oil
- 5/8 lb peeled and deveined shrimp
- 2 tbsp grated pecorino romano cheese
- 1 tbsp chopped parsley (optional)
Steps
- Melt the butter in a medium saucepan over medium heat, add the broth, and bring it to a boil.
- Stir in the rice, cover the pan, reduce the heat to low, and simmer for 22 to 25 minutes, until tender.
- Heat the olive oil in a large skillet over medium-high heat, then cook the shrimp for 3 to 4 minutes, until opaque and 145 F.
- Stir the peas into the rice, cover, and cook for 2 minutes, then fold in the shrimp, pecorino, and parsley.
