Ingredients
- 2 eggplants
- 1 batch marinara sauce
- 8 oz freshly grated mozzarella
- 12 oz part-skim ricotta
- 1/3 cup parmesan cheese
- 1 large egg
- 1/3 cup chopped basil (optional)
- nonstick cooking spray
- kosher salt
- freshly ground black pepper
Steps
- Slice the eggplants lengthwise, sprinkle them with salt, and let them stand for 15 minutes.
- Heat the grill to medium-high and coat the grates with nonstick cooking spray.
- Grill the eggplant slices for 4 to 5 minutes per side until tender and lightly marked.
- Heat the oven to 375 F and stir the ricotta, egg, Parmesan, basil, salt, and pepper together.
- Layer marinara, grilled eggplant, ricotta mixture, and mozzarella in a 9-by-13-inch baking dish.
- Bake for 20 minutes until the egg is firm and the cheese is bubbling, then rest for 5 minutes.
