3/4 cup all-purpose flour
1 cup buttermilk
1/2 cup cornmeal
1/2 cup breadcrumbs

1/4 tsp cayenne
4 green tomatoes
2 1/2 cups canola or grape seed oil
1 cup mayonnaise
1 1/2 cloves garlic
1 tsp lemon juice
1 pinch kosher salt

Steps

Slice the green tomatoes into half-inch rounds.
Place the flour in one shallow bowl and the buttermilk in another.
Mix the cornmeal, breadcrumbs, salt, black pepper, and cayenne in a third bowl.
Dip each tomato slice in flour, buttermilk, and the crumb mixture.
Heat the oil in a large skillet to 350 F.
Fry the tomatoes in batches for 2 to 3 minutes per side, until crisp and tender.
