- 1 lb cantaloupe
- 2 cups diced fresh pineapple
- 1 lb fresh strawberries
- 1 pint fresh blueberries
- 3 or 4 kiwis
- 1 tsp orange zest
- 3 tbsp fresh orange juice
- 1 tsp pure vanilla extract
- 2 tbsp brown sugar
- 2 tbsp minced fresh mint leaves (optional)
Steps
- Cut the cantaloupe, strawberries, and kiwis into bite-size pieces.
- Whisk the orange zest, orange juice, vanilla, and brown sugar in a small bowl.
- Combine the cantaloupe, pineapple, strawberries, blueberries, and kiwi in a large bowl.
- Pour the dressing over the fruit and toss gently.
- Fold in the mint and chill the salad for 5 minutes.
