Ingredients
- 1 cup cake flour
- 3/4 cup plus 2 tablespoons sugar
- 12 egg whites
- 1 1/2 tsp cream of tartar
- 1/4 tsp salt
- 3/4 cup sugar
- 6 egg yolks
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1 lemon icing glaze
Steps
- Heat the oven to 325 F and prepare a 10-inch tube pan without greasing it.
- Beat the egg whites, cream of tartar, and salt until foamy, then gradually beat in 3/4 cup sugar until stiff.
- Beat the egg yolks with the remaining sugar, vanilla, and almond extract until thick.
- Fold the cake flour into the yolk mixture, then gently fold that mixture into the egg whites.
- Pour the batter into the tube pan and bake for 40 minutes, until the cake springs back when pressed.
- Cool the cake upside down for 10 minutes, then turn it out and spread it with the lemon icing glaze.
