Ingredients
- 5 small sweet potatoes
- 1 cans (15 oz) black beans
- ~1/4 cup grated manchego or other mexican cheese
- avocado crema
- fresh salsa (optional)
Steps
- Heat the oven to 400 F and pierce the sweet potatoes several times with a fork.
- Bake the sweet potatoes on a baking sheet for 40 to 45 minutes, until tender.
- Warm the black beans in a saucepan over medium heat for 5 minutes, stirring occasionally.
- Split the baked sweet potatoes lengthwise and gently mash their centers with a fork.
- Fill the potatoes with black beans, then top them with cheese, avocado crema, and fresh salsa.
