Ingredients
- 2 tbsp vegetable oil
- 1 onion
- 3 clove garlic
- 2 tsp ground cumin
- 1 tsp sweet paprika powder
- 1 vegetable bouillon cube
- 1/2 tsp cayenne pepper
- 1 pinch ground black pepper
- 3 cup cooked pinto beans
- 1 1/2 cup water
- 1 tbsp chipotle adobo sauce
- 1/2 lime
Steps
- Heat the oil in a large skillet over medium heat and cook the onion for 5 minutes.
- Add the garlic, cumin, paprika, cayenne, and black pepper, then cook for 1 minute.
- Stir in the beans, water, bouillon cube, and chipotle sauce, then simmer for 15 minutes.
- Mash the beans in the skillet until mostly smooth and stir in the lime juice.
