Ingredients
- 1/4 cup coconut cream
- 1 tbsp thai green curry paste
- 1 clove garlic
- 4 oz firm tofu
- 1/4 cup shredded red cabbage
- 1/2 carrot
- 1/4 red bell pepper
- 1 vegetable bouillon cube
- 1/2 cup spinach
- 1 3/4 oz rice vermicelli noodles
- 2 cup boiling water
Steps
- Crumble the bouillon cube into 2 cups boiling water in a heatproof bowl.
- Stir the coconut cream, curry paste, and minced garlic into the hot broth.
- Add the tofu, cabbage, carrot, bell pepper, and spinach, then simmer in a saucepan over medium heat for 5 minutes.
- Add the rice noodles and cook for 4 minutes, until tender.
- Remove the soup from the heat and rest it for 1 minute before serving.
