Ingredients

1 small sweet potato
2 tsp olive oil
1 onion
2 cloves garlic
3/4 cup white rice
2/3 cup dry white wine
2 cup vegetable stock
3 tbsp parmesan cheese
1/4 tsp nutmeg
1/4 tsp paprika
1/4 tsp salt
1/4 tsp ground black pepper

Steps

Heat the oven to 400 F and roast the diced sweet potato with olive oil for 35 minutes.
Cook the onion and garlic in a large saucepan over medium heat for 8 minutes.
Stir in the rice, nutmeg, paprika, salt, and pepper and cook for 3 minutes.
Pour in the wine and simmer for 5 minutes, stirring often.
Add the stock one-half cup at a time and cook for 35 minutes, stirring after each addition.
Fold in the roasted sweet potato and Parmesan, then rest the risotto for 15 minutes.
