Ingredients
- 3/4 cup sweet potato
- 1 cup butter
- 2 eggs
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 dash salt
- 1/4 tsp cinnamon
- 1 cup semi-sweet chocolate chips
- 1 cup walnuts (optional)
Steps
- Heat the oven to 350 F and line a baking sheet with parchment.
- Beat the butter, sugar, and brown sugar until creamy, then mix in the eggs, sweet potato, vanilla, and lemon extract.
- Stir in the flour, baking soda, baking powder, salt, and cinnamon until just combined.
- Fold in the chocolate chips and walnuts if using.
- Drop 12 spoonfuls onto the sheet and bake for 12 to 15 minutes, until the centers are firm.
- Cool the cookies on the sheet for 8 minutes.
