Ingredients

  • 1/2 cup unsalted butter
  • 3 eggs
  • 3/4 cup chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup all-purpose flour
  • 1/2 cup cocoa powder

Steps

  1. Heat the oven to 350 F and grease an 8-inch square baking pan.
  2. Whisk the sweet potato purée, melted butter, eggs, brown sugar, and vanilla in a large bowl.
  3. Whisk the flour, cocoa powder, baking soda, and salt in a separate bowl.
  4. Stir the dry mixture into the sweet potato mixture, then fold in the chocolate chips.
  5. Spread the batter in the pan and bake for 25 to 28 minutes, until the center is set and the eggs are fully cooked.
  6. Cool the brownies in the pan for 5 minutes before cutting.
