Ingredients

3/4 cup sunflower seed butter
3 tbsp honey
1 egg
2 tsp vanilla extract
2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 heaping cup grated summer squash with water squeezed out
1/3 cup chocolate chips (optional)

Steps

Heat the oven to 350 F and lightly oil a baking sheet.
Stir the sunflower seed butter, honey, egg, vanilla, cinnamon, baking soda, and salt in a bowl.
Fold in the squeezed squash and chocolate chips, if using.
Drop 12 spoonfuls of dough onto the baking sheet and flatten them slightly.
Bake for 10 to 12 minutes, until the centers are set and the egg is fully cooked.
Cool the cookies on the baking sheet for 2 minutes.
