Ingredients

  • 1/2 cup water
  • 1 tbsp tapioca starch
  • 1/3 cup honey
  • 1/2 tsp vanilla extract
  • 11 tbsp tapioca starch divided
  • 9 tbsp almond flour
  • 1/2 cup slivered almonds
  • 6 tbsp coconut sugar
  • 1 pinch salt
  • 3 1/2 tbsp ghee
  • 1 cup fresh strawberries
  • 1 cup fresh rhubarb

Steps

  1. Heat the oven to 350 F and lightly oil an 8-inch square baking dish.
  2. Stir the strawberries, rhubarb, honey, water, vanilla, and 1 tablespoon tapioca starch in the dish.
  3. Mix the remaining 10 tablespoons tapioca starch with almond flour, almonds, coconut sugar, salt, and ghee until crumbly.
  4. Scatter the topping over the fruit and bake for 40 minutes, until bubbling and golden.
  5. Cool the crisp for 15 minutes before serving.
