Ingredients
- 3 cups chopped kale
- 2 tbsp extra virgin olive oil
- 1 pinch salt
- 1 cup chopped strawberries
- 1/4 cup crumbled feta
- 5/8 cup candied walnuts
- 10 blanched asparagus spears
- 1/4 cup extra virgin olive oil
- 2 1/2 tbsp balsamic vinegar (optional)
- 1 tbsp red wine vinegar
- 1 tbsp dijon mustard
- 1 tsp honey
- 1 clove garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
Steps
- Massage the kale with 2 tablespoons olive oil and a pinch of salt for 2 minutes.
- Whisk the remaining olive oil, vinegars, mustard, honey, garlic, salt, and pepper in a small bowl.
- Add the strawberries, feta, walnuts, and asparagus to the kale.
- Pour the dressing over the salad and toss for 1 minute.
