Ingredients
- 600 g strawberries thickly sliced
- 1 tbsp golden caster sugar
- 1/2 lemon juiced
- 300 ml double cream
- 50 g icing sugar sifted
- 1 tsp vanilla extract
- 165 g full fat soft cheese
- 2 tbsp strawberry jam
- 8 shortbread biscuits roughly crumbled
- 8 scoops vanilla ice cream
Steps
- Toss the strawberries with the caster sugar and lemon juice, then rest them for 10 minutes.
- Whip the double cream, icing sugar, and vanilla until soft peaks form.
- Beat the soft cheese and strawberry jam in a medium bowl until smooth.
- Fold the whipped cream into the cheese mixture.
- Layer the shortbread, cream mixture, strawberries, and ice cream in four glasses.
- Chill the sundaes for 10 minutes before serving.
