Ingredients
- 2 cups graham cracker crumbs
- 8 tbsp unsalted butter
- 2 tbsp granulated sugar
- 2 lb cream cheese
- 1 cup granulated sugar
- 5 large eggs
- 1/4 cup sour cream
- 1/2 tbsp vanilla extract
- 1 lb strawberries (optional)
- 1/3 cup granulated sugar (optional)
- 1 tbsp lemon juice
Steps
- Heat the oven to 325 F and grease a 9-inch springform pan.
- Mix the graham cracker crumbs, melted butter, and 2 tablespoons sugar, press the mixture into the pan, and bake for 10 minutes.
- Beat the cream cheese and 1 cup sugar until smooth, then beat in the eggs one at a time.
- Mix in the sour cream and vanilla, pour the filling over the crust, and bake for 65 minutes, until the center reaches 160 F.
- Cool the cheesecake for 30 minutes, then cover and chill it for 5 hours and 30 minutes.
- Slice the strawberries, toss them with the optional sugar and lemon juice, and spoon them over the chilled cheesecake.
