Ingredients
- 2 tbsp unsalted butter
- 2 cups cranberries
- 2/3 cup pecans
- 1/2 cup granulated sugar
- 12 tbsp unsalted butter
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1 tbsp coarse sparkling or turbinado sugar (optional)
Steps
- Heat the oven to 350 F and grease a 9-inch pie plate with 2 tablespoons butter.
- Toss the cranberries and chopped pecans with 1/2 cup sugar, then spread them in the pie plate.
- Beat the remaining butter and sugar until creamy, then beat in the eggs, vanilla, and almond extract.
- Stir in the flour and salt, then spread the batter evenly over the cranberry mixture.
- Sprinkle the top with coarse sugar if using and bake for 40 to 45 minutes, until golden and set.
- Cool the pie for 10 minutes before slicing.
