Ingredients
- 1 cup fresh strawberries
- 1 banana
- 1 1/2 tbsp sugar
- 1/4 tsp grated lemon
- 1 tbsp fresh lemon juice
- 1 cup egg substitute or 4 eggs
- 1/4 tsp salt
- 2 tbsp butter or 2 tablespoons margarine
Steps
- Slice the strawberries and banana, then toss them with sugar, lemon zest, and lemon juice.
- Warm half the butter in an 8-inch nonstick skillet over medium heat and cook half the fruit for 2 minutes.
- Whisk half the egg substitute or two eggs with half the salt, pour into the skillet, and cook until nearly firm.
- Fold the omelet over the fruit and cook until the eggs are fully firm, then transfer it to a plate.
- Repeat with the remaining butter, fruit, egg mixture, and salt to make a second omelet.
