Ingredients
- 3 very over-ripe bananas
- 2 large eggs
- 1/3 cup honey
- 1/4 cup oil
- 2 tsp pure vanilla extract
- 1 1/4 cups packed almond flour
- 1 1/2 cups oat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cinnamon
- 1/2 tsp fine sea salt
- 1 cup fresh blueberries
Steps
- Heat the oven to 350°F and grease a 9-by-5-inch loaf pan.
- Mash the bananas with the eggs, honey, oil, and vanilla in a large bowl.
- Whisk the almond flour, oat flour, baking soda, baking powder, cinnamon, and salt in a separate bowl.
- Stir the dry mixture into the banana mixture, then gently fold in the blueberries.
- Spread the batter in the pan and bake for 55 minutes, until a toothpick comes out clean.
- Cool the loaf in the pan for 15 minutes before slicing.
