Ingredients
- 3/4 cup mayonnaise
- 6 cloves garlic
- 1 tsp curry powder
- 4 tbsp extra-virgin olive oil
- 1 1/2 lb sweet potatoes
- 2 lb sirloin steak
- 2 tsp kosher salt
- freshly cracked black pepper (optional)
- minced fresh cilantro (optional)
Steps
- Heat the oven to 425 F and line a large baking sheet with cooking oil.
- Cut the sweet potatoes into bite-size pieces, toss them with 2 tablespoons oil, and roast for 25 to 30 minutes.
- Stir the mayonnaise, garlic, curry powder, and 1 tablespoon oil in a small bowl.
- Cut the steak into bite-size pieces and season with salt and pepper.
- Heat the remaining oil in a large skillet over medium-high heat and cook the steak for 6 to 8 minutes, until it reaches 145 F.
- Toss the steak with the roasted sweet potatoes and serve with the curry mayonnaise.
