Ingredients
- 1 tbsp olive oil
- 2 cups fresh spinach leaves
- 4 large eggs
- 2/3 cup heavy cream
- 1/3 cup crumbled feta cheese
- 1 1/2 plum tomatoes
- 2 cloves garlic
- salt and freshly ground black pepper (optional)
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1/4 cup olive oil
- 1/4 cup ice cold water
Steps
- Heat the oven to 375 F and lightly oil a 9-inch pie pan.
- Mix flour and salt, then stir in olive oil and ice water until a dough forms.
- Press the dough into the pie pan and bake for 8 minutes.
- Cook the spinach, chopped tomatoes, and garlic in olive oil over medium heat for 5 minutes.
- Whisk the eggs, heavy cream, salt, and pepper, then stir in the feta and cooked vegetables.
- Pour the filling into the crust and bake for 35 to 40 minutes, until the eggs are firm.
