Ingredients
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp fine sea salt
- 2 1/4 cups low-fat buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 3 tbsp unsalted butter
- light olive oil
Steps
- Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk buttermilk, eggs, vanilla, and melted butter in a second bowl.
- Stir the wet mixture into the dry mixture just until combined, leaving a few small lumps.
- Heat a lightly oiled large skillet or griddle over medium heat.
- Pour about 1/4 cup batter for each pancake and cook for 2 minutes, until bubbles form.
- Flip the pancakes and cook for 1 to 2 minutes, until golden and cooked through.
