Ingredients
- 2 large eggs
- 8 wonton wrappers
- 1 handful spinach
- 1/2 tbsp plain greek yogurt
- 1 tbsp crumbled feta cheese
- 1 sprinkle of dried minced onion
- top with light sprinkle of parsley and red pepper flakes

Steps
- Heat the oven to 375 F and lightly oil eight cups of a standard muffin pan.
- Press one wonton wrapper into each prepared cup.
- Whisk the eggs with yogurt, feta, dried onion, parsley, and red pepper flakes.
- Divide the spinach among the wrappers, then pour the egg mixture over it.
- Bake for 10 to 12 minutes, until the eggs are firm and reach 165 F.
- Top the cups with green salsa before serving.
