Ingredients
- 1/2 cup 1 stick unsalted butter
- 3 very ripe bananas
- 1 large egg
- 3/4 cup granulated sugar
- 3/4 cup whole milk ricotta cheese
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp kosher salt
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with butter.
- Melt the remaining butter and mix it with mashed bananas, egg, sugar, ricotta, and vanilla.
- Whisk the flour, baking powder, baking soda, and salt in a separate bowl.
- Stir the dry mixture into the banana mixture just until combined.
- Pour the batter into the pan and bake for 55 minutes, until firm in the center.
- Cool the loaf in the pan for 10 minutes before slicing.
