- 1 lb lasagnette pasta or dried lasagna noodles broken in half
- 2 tbsp olive oil
- 12 oz spicy italian sausage
- 8 oz crimini or button mushrooms
- 1 pint cherry tomatoes
- 4 cloves garlic
- 1 cans (14 oz) beef or chicken broth
- 1/4 tsp red chile flakes
Steps
- Heat the olive oil in a 12-inch deep skillet over medium-high heat.
- Cook and crumble the sausage for 7 to 8 minutes, until browned and it reaches 160 F.
- Add the mushrooms, garlic, and chile flakes, then cook for 5 minutes.
- Stir in the cherry tomatoes, broth, and broken noodles.
- Bring the mixture to a boil, then simmer uncovered for 15 to 18 minutes, stirring often, until the pasta is tender.
- Check that the sausage reaches 160 F before serving.
