Ingredients
- 2 tbsp olive oil
- 250 g merguez or spicy italian-style sausages
- 1 onion finely chopped
- 350 g trofie or fusilli pasta
- 3 cloves garlic finely chopped
- 1 1/2 tsp chilli flakes
- 1 tsp fennel seeds
- 20 g parmesan finely grated
- 10 g flat-leaf parsley roughly chopped
- 1 lemon zested and juiced
Steps
- Boil a large pot of salted water.
- Heat olive oil in a large skillet and cook the sausage for 8 to 10 minutes until it reaches 160°F.
- Add the onion and cook for 5 minutes until softened.
- Stir in the garlic, chili flakes, and fennel seeds and cook for 1 minute.
- Boil the pasta for 8 to 10 minutes until tender, then drain it.
- Toss the pasta with the sausage mixture, lemon zest, lemon juice, parmesan, and parsley.
