Ingredients
- 1 lb broccoli rabe
- 16 oz penne pasta
- 2 tbsp olive oil
- 1 lb italian sausage
- 4 cloves garlic
- 3/4 tsp crushed red pepper flakes
- 1 tbsp lemon juice
- 1/4 cup grated parmesan cheese (optional)
- kosher salt (optional)
- freshly ground black pepper (optional)
Steps
- Boil salted water in a large pot and cook the broccoli rabe for 2 minutes.
- Transfer the broccoli rabe to a bowl, then cook the penne in the same water according to the package directions.
- Heat the olive oil in a large skillet over medium heat and cook the sausage for 7 to 9 minutes until it reaches 160 F.
- Add the garlic and red pepper flakes, then cook for 1 minute.
- Chop the broccoli rabe and add it to the skillet with the drained penne and lemon juice.
- Toss with Parmesan if using, then season with salt and pepper.
