Ingredients
- 18 oreos
- 2 1/2 tbsp butter
- 2 pkgs cream cheese
- 1/4 cup + 2 tbsp granulated sugar
- 2 large eggs
- 1/2 tsp vanilla extract
- 1 1/3 cups white chocolate chips
- 1/2 cup + 1/3 cup heavy cream
- 25 fresh strawberries
- 2 tbsp powdered sugar
Steps
- Heat the oven to 325 F and line a 24-cup mini muffin pan with paper liners.
- Crush the cookies, mix them with melted butter, press the crumbs into the liners, and bake for 5 minutes.
- Beat the cream cheese, 1/4 cup sugar, eggs, and vanilla until smooth, then spoon the mixture over the crusts.
- Bake for 18 to 20 minutes, cool the bites for 10 minutes, and chill them for 20 minutes.
- Melt the white chocolate with 1/2 cup cream over low heat, cool it briefly, and spoon it over the chilled cheesecakes.
- Top each bite with a strawberry, whip the remaining cream with 2 tablespoons sugar, and pipe a small white tip on each hat.
