Ingredients
- 1 cup all purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut oil
- 3/4 cup dark brown sugar
- 1 egg
- 2 tsp vanilla extract
- 1 tsp espresso powder or instant coffee (optional)
- 3/4 cup chocolate chips
- coarse sea salt (optional)
Steps
- Heat the oven to 350 F and line a baking sheet with parchment or grease it with cooking oil.
- Stir the flour, cocoa powder, baking soda, and salt together in a medium bowl.
- Whisk the melted coconut oil, brown sugar, egg, vanilla, and espresso powder if using in another bowl.
- Stir the dry mixture into the wet mixture, then fold in the chocolate chips.
- Scoop 16 portions onto the baking sheet and sprinkle with coarse sea salt if using.
- Bake for 10 to 12 minutes, until the edges are set and the centers look slightly soft.
