- 2 tbsp extra-virgin olive oil
- 2 tsp red wine vinegar
- 1 clove garlic
- 3 tbsp chopped fresh basil
- 1/2 tsp dried oregano
- 1 tsp sugar
- 3/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 3 tbsp pine nuts
- 2 oz crumbled feta cheese
- 1/3 cup pitted kalamata olives
Steps
- Slice the bell peppers into thin strips and place them in a large bowl.
- Whisk the oil, vinegar, minced garlic, basil, oregano, sugar, salt, and pepper in a small bowl.
- Pour the dressing over the peppers and toss until evenly coated.
- Fold in the pine nuts, feta, and olives.
- Chill the salad for 20 minutes before serving.
