Ingredients
- 70 g about 2/3 cup almond meal/flour
- 120 g about 1 cup confectioners sugar
- 2 large egg whites
- 50 g exactly 1/4 cup leveled granulated sugar
- 1/4 cup freeze dried raspberries
- 3/4 cup fresh or frozen raspberries
- 3 tbsp granulated sugar
- 1 tbsp lemon juice
- 6 tbsp unsalted butter
Steps
- Blend the almond flour, confectioners sugar, and freeze-dried raspberries until finely mixed.
- Beat the egg whites and granulated sugar until firm peaks form, then fold in the dry mixture.
- Pipe small rounds onto a lined baking sheet and let them rest for 20 minutes.
- Bake at 300 F for 14 minutes, then cool the shells completely.
- Cook the raspberries, 3 tablespoons sugar, and lemon juice in a small saucepan for 8 minutes, then cool.
- Beat the butter with the raspberry mixture, spread it between matching shells, and chill for 10 minutes.
