Ingredients
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups granulated sugar
- 2 tbsp lemon zest
- 3/4 cup unsalted butter
- 4 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 2 tbsp fresh lemon juice
- 3 1/4 cups powdered sugar
- 1/3 cup fresh lemon juice
- fresh strawberries (optional)
- sliced lemons and mint leaves (optional)
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
- Whisk the flour, cornstarch, baking powder, baking soda, and salt in a bowl.
- Beat the butter, sugar, and lemon zest until light, then add the eggs and vanilla.
- Mix in the dry ingredients with the buttermilk, sour cream, and 2 tablespoons lemon juice until smooth.
- Spread the batter in the pan and bake for 25 to 30 minutes, until the center springs back.
- Cool the cake for 10 minutes, whisk the powdered sugar with 1/3 cup lemon juice, and spread the glaze over the warm cake.
